Beyond Pesto

This summer I want to really get the most from my herb garden, so I found a few uses for herbs beyond the standard pesto recipe.

Lavendar Lemonade- my lavendar is back this year and looking better than ever! This sweet treat gets an exotic hint of flavor with lavendar.

Rosemary Skewers Mm...Can you imagine how good rosemary skewered grilled potatoes would be? I'm sure if you parboiled them they would thread more easily on the rosemary stem.

Herb Salt So simple to make! I think this would make a lovely housewarming gift as well.

Oregano Olive Oil- brilliant! My oregano is a bit out of control so I think I'll flavor some olive oil from the stems I need to cut back.

Basil Ice Cream- Ok, truthfully I'll probably never get around to making this one. But it does look awfully refreshing.

I'm inspired to make the herb salt. I've seen recipes before for various salt blends, but the link that you used just makes it look so delish!

Could you convert the basil Ice Cream from the metric measures? I could convert, but most people don't know how. thanks!

I'm not usually up for making ice cream, but I DO love sorbet, and have made this tangerine basil sorbet on numerous occasions with delicious results:

Ingredients:
2 cups water
2 cups sugar
2 cups tangerine juice
1 handful of basil
juice of 1 lemon

1. Boil water and sugar into simple syrup & cool.
2. Add tangerine juice to syrup & bring to a boil.
3. Add basil & remove from heat. Allow basil to steep 5-10 minutes.
4. Add lemon juice.
5. Stir everything, then drain into a bowl
6. Allow liquid to cool, then freeze for 2 hours - stirring every 30 minutes until sorbet is set.

Hi Capri- Wow. That sounds amazing! I just saw this lemon-mint granita at smittenkitchen: http://smittenkitchen.com/2009/06/lemon-mint-granita/ and wanted to give that one a try too. Seems like I need to make them both and have a dinner party :)

Hi Sue- I'd like to take a stab at it, but I'd hate to mess anyone up! It seems like the author of the posts responds to comments so I'm sure she could assist. Thanks for commenting!

I made the herb salt yesterday with some basil I had and it turned out pretty good if I do say so myself! Easy isn't the word when making this stuff but the results really are great. Smells like heaven ... at least what I hope it smells like! ;)

Thanks for the Lavender idea - I was wondering how I could use the flourishing lavender in my life. I think I'll skip the icecream though.
